Shepherd's Pie (with gluten free variation)

Russell really does not care for turkey.  This might be different if we were raising turkeys ourselves but not for what we can get from the grocery store.  I was planning making curry for Thanksgiving dinner but we were given some venison sausage and I made shepherd's pie.  This my go to recipe.  It started from a recipe in Sunset magazine but it much too fussy.  I simplified it.  My one suggestion, though I know it is not possible, make this night before and reheat.  I truly gets that much better with sitting.

Shepherd's Pie

2 onions, finely chopped

2 teaspoons sugar

4 tablespoons olive oil

3 tablespoons flour or potato starch

1 1/2 pounds ground meat - in this case I used venison sausage.  I have used ground beef, pork, or turkey.

2 tablespoon Dijion mustard (make sure it is gluten free if you need to)

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup vegetable broth

1 10 to 16 ounce bag of frozen mixed vegetables - chose the mix your family likes

2 1/2 pounds potatoes

1 cup butter

4 ounces cream cheese

1/2 cup grated parmesan cheese

2 to 4 tablespoons heavy whipping cream

Peel the potatoes and put in a large pot.  Cover with water and bring to a boil.  Lower the temperature and cook until a fork can go into them easily.

Put a LARGE skillet or casserole dish on medium heat.  Add two tablespoons olive oil and heat.  Put in the onions.  Lower the heat and cook until golden brown.   You are caramelizing them.  This should take up about 15 minutes, plus or minus a bit.  Sprinkle the sugar over the onions and cook for two to three minutes.  

Preheat oven to 400 degrees Fahrenheit.

Add the meat to the onions and brown it very well.  Add the rest of the oil if it is needed.  Add the Dijon mustard, salt, and pepper.  Sprinkle the flour or potato starch over the meat mixture.  Cook for two or three minutes stirring.  Add the broth.  Continue stirring as it thickens.  If it gets too thick add more broth or water.  Add the vegetables and mix through well.  

Turn off the heat.

If and when the potatoes are done (see how my days go ;) ), drain them.  Set the pot back on the stove and add the butter, cream cheese, and parmesan.  Mash with all your might!  Add a bit of heavy whipping cream to make them smoother and mash some more.  You do not want them too runny so add a the heavy whipping cream a little at a time.

Spread the mashed potatoes over the meat mixtures.

Bake for 30 to 40 minutes or until brown and bubbly.  I should have put a baking sheet under the skillet to catch all the drips.

Serve.  You might need to get out of the way of the descending herds.....

learning

I have lots of things to share from our long weekend.  We did not do anything traditionally and I had the time to try recipes.  I am so thankful for my family.  But they both worked most of the weekend.  I took myself off to the Homestead Fair in Waco for the day.

I have never been able to use a drop spindle.  I just use a spinning wheel.  But guess what?  After a patient lady sat with me, I can do it!  See!!!!!

I did that!!!  I am so excited and now I can take spinning with me anywhere.  The patient lady's twenty year old son made this spindle and I bought it at the fair.  I took it to work with me and spun during lunch in the coffee bar.  That means my heavily male dominant workmates asked all types of questions.  Some knew what I was doing, others did not.  This is a good lunch time activity for me.  It helps lessen the stress of work and I am productive. 

Big smiles!  Now, can I get enough yarn spun for Christmas presents?

being thankful

Today is Thanksgiving.  American Thanksgiving as one of my friends says!  But it is a day to remember what there is in your life to be thankful for.

I am thankful for my beloved.  He likes having adventures and learning new things.  It makes my life pretty terrific.

My short person who is no longer very short.  Her Poppa calls her little one but she is taller then me!  I am thankful that she lives in our backyard apartment.  I like having her close.

I am thankful for the ability and means to take care of my family.  LIke this Sunday's counter where I fill the freezer and bake bread so there is food in our tummies.

I am thankful for the house that my beloved is building us.  I help but then do silly things like fall off the wall.  I am going to do the plastering.  Makes me smile.

Just a bit more of the roof to do then it is just the finishings.

I have so many more things to be thankful for but these are the big ones.  I hope you have as many blessings  in your life and a lovely Thanksgiving.

cookie love

Our darling daughter wanted adventures for her birthday.  But adventures are sometimes very hard to come by.

I made her coupons for some momma made clothes and chocolate chip cookies.  She asked for chocolate chip cookies last week.  I use the Toll House Chocolate Chip cookie recipe:

I do a few modifications:  leave out the nuts and cut down the chocolate chips to 3/4 cup.  If you can leave the dough of bowl in the refrigerator overnight, it helps.  I learned that from the nytimes.com!

This is faerie love.  She was pleased.

By the way, the adventure?  She got sky diving lessons and now has her A license.

malted love

We like to go to Katz's Deli and have cheesecake milkshakes.  But lets be honest here, the milkshakes are much too big, even if two share them.  And they cost many pennies.  We decided to started making something similar at home.  Okay, this is a malt but it is yummy!

Vanilla Malts

1 pint the best vanilla ice cream (Blue Bell in Texas, Tillamok in Oregon or Washington)

1 cup plain hempmilk

1/4 cup malt (Carnation malted milk mix)

Put everything in a blender container, cover, and whir it on low until the big chunks are broken up. Then whir it on high until the malt is smooth.

Pour into two juice glasses and share with your love.  See that hand?  My truck got an oil change today!  And the faerie got taught how to change the oil in her "new" vehicle.  That is love.
