gluten free chocolate fudgy oatmeal peanut butter brownies

I got home from work and skating today knowing I was going to need to make something for the potluck at work tomorrow.  The potluck is on a Thursday, which does not sound so difficult, but one of the people eating eats vegetarian on Thursdays.  And she eats no eggs on Thursdays.  Part of the challenge was to come up with some sweet she could eat.  But then I figured any leftovers my Beloved would wish to eat would need to be gluten free.  I came up with the brownie recipe.  

Chocolate Fudgy Oatmeal Peanut Butter Brownies

Notes:  To make vegan, find a peanut butter chip without whey in them or use chocolate chips.

            If you allergic to nuts, use 1/3 cup sorghum flour and 1/3 cup amaranth flour in the place of almond 

flour

    You can use 1 2/3 cup wheat flour in the place of all the gluten free flours if you wish.

1 1/2 cup brown sugar

1/2 cup olive or canola oil

2/3 cup hempmilk or other non-dairy milk or regular milk

2 teaspoons vanilla extract

1/3 cup arrowroot starch

1/3 cup potato flour

2/3 cup almond flour

1/3 cup teff flour

2/3 cup cocoa powder

3/4 teaspoon baking soda

1/4 teaspoon cream of tartar

3/4 teaspoon salt

2 cups quick oats

1/2 cup chocolate chips

3/4 cup peanut butter chips

Preheat oven to 350 degrees Fahrenheit.  Line a 9 x 13 inch pan with parchment paper or butter.  I used parchment paper because it is just easier.

Mix the sugar, milk, oil, and vanilla together.  Add all the flours, cocoa, baking soda, cream of tartar, and salt.  Mix well.  Mix in the oatmeal.  Mix in the chocolate chips.  At this point, you could mix in the peanut butter chips or sprinkle on the top.  I chose to sprinkle.

Bake for 20 minutes or until a knife stuck in the brownies come out clean.  If you can, wait 20 minutes to cool so they hold together better coming out of the pan.

These are just decadence.  Especially if they are just a bit warm.  There should be leftovers for my Beloved tomorrow but there may not be.

for Miss E

It has been an evening of stitching.  Currently, on my machine but soon I need to put buttons on and make button holes by hand.  The Tall Short persons bag is done.  If you wish to see what it looks like, take a look at yesterday's post.  It is the same as the one I made for myself.  I used mine today, twice! and I really liked the bigger size.  I know have measurements bouncing around in my head.

I have a friend at work, Miss E, who I usually go to the farmer's market with on Wednesdays.  She has the free giveaway bags in her office and I keep thinking that I should make her a bag.  This week she has some tuff decisions so I thought it was a good idea to make it so.  I used some of the bright quilting fabric I bought.  It is really not my style but cool colors.

I few cuts.  A few pins.  A few lines of stitching and here is the bag.  The colors are actually more true in the previous photo.  I lost a light bulb and the camera's battery was extremely low.

Here is the other side.  It is all "wrapped" (i.e., tied with a bow) and ready to go for tomorrow.  I hope she likes it.

feeling better

I am actually feeling better!  This is exciting because I feel like I can do more then spin and listen to audiobooks.  I did get over two pounds of fiber spun and get the skeins drying after setting the twist it feels like an accomplishment.  The slivery grey and turquoise are both going to be shawls.  I showed you the start of the shawl earlier this week.

On the road trip for my Beloved, we went to a fabric store.  Not so different then the ones local but a little edgier.  Both darker and brighter at the same time.  I came home with a bit of fabric.

My Tall Short person really likes skulls and skeletons and when I saw this fabric, I thought she must have it.  They were lacy skulls!

I paired it with a strange owl print.  The owls are strange.  And there are bugs flying around.  And the background is grey.  It is so here.  But the surprising thing?  I had to buy enough fabric for myself!

I made bags for us!  Reversible.  We do not match often anymore unless it is the wearing of black. That is more something my Beloved and I do.

I am going to stash it in my bicycle bag so I always have a shopping bag at work.  I have been heading to the farmer's market at lunch so this will be a very good thing.  Miss E is usually with me and I keep thinking I need to make her a shopping bag as well.  I am thinking there are some other finds from that interesting fabric store that just may fit her.  (grin)

and when you feel like poo, what do you do?

I got home from work today feeling badly.  I should not have been surprised with how I woke up this morning.  Just poo!  So, I made a large pot of tea and spun while listening to the computer.  I listen to audiobooks or picture shows.  We do not have a television.  My Beloved was working so I could just spin and spin and spin....  I actually finished the slivery grey wool silk rovings I had.  

I just need to set the twist now and I can roll the yarn into a ball.  I am hoping there will be enough to finish the shawl I made this last weekend.  We may be going to a jousting tournament (real thing) this weekend and I would not mind having the yarn ready to work on my shawl.

My Beloved has been working many evening lately.  I find cooking does go by the wayside unless it is the basics.  Things like bread or bean soup or clean out the refrigerator chili.  Things that I have already blogged about.  I promise there will be more.  Especially since my Beloved is not eating gluten again.  I keep thinking about making my favorite cake gluten free.  I did not get any cake for my birthday.

quiet evening

Part of this weekend was finding a fabric store I liked.  I think one of the largest draws for us to go back is that they have a bowl called button soup where you can dig through the bowl and take purchase any of the buttons you like for twenty cents.  My Beloved plopped himself right down and found 31 wooden buttons he liked.   It is better then him going around the fabric store and touching fabric.  The ones he likes usually run $300 a yard.  He says he is not allowed to touch fabric anymore!  The man does make me laugh.

It is a good thing he found buttons he liked because I am working on another fuzzy shirt for him that will need buttons.  And he likes the idea of the kilt I am working on for him have wooden buttons instead of snaps.  There are also three more shirts cut out.  None of them are work shirts so they can all have wooden buttons.  The idea will be to mix and match them.

I have been having quiet evenings lately because I am the only one home.  I am trying to perfect a chocolate swirl bread or a chocolate roll.  I think it works better as a roll.  When I am pleased with the recipe, I will share.
